  • Willamette is a classic American hop with roots in traditional English varieties. It delivers a soft, earthy, and floral aroma with gentle notes of spice, herbs, and mild fruitiness. Unlike punchy citrus hops, Willamette stays subtle, allowing the raspberry and blueberry character to shine.

    Why it works:
Its low bitterness and mild spice give structure without clashing with the berries, making it ideal for a fruit-forward wheat ale.

  • US 2-Row
A clean, neutral base malt that keeps the beer crisp and drinkable. It supports the fruit character without adding heaviness.

    White Wheat
Adds soft graininess, fuller mouthfeel, and natural haze. Wheat proteins give the beer its silky texture and help carry the berry purée.

    Crystal Lite
A very light crystal malt that adds a hint of sweetness, gentle body, and a touch of honey-like flavor. It rounds the edges of the tart berries without adding caramel heaviness.

Why They’re Good for a Fruit Wheat Ale
This blend creates a smooth, refreshing malt backbone with just enough depth to balance the raspberries and blueberries. The wheat is essential for haze and mouthfeel, while the light crystal adds polish without competing with the fruit.

  • This beer uses a clean-fermenting American ale yeast known for producing neutral, crisp, and consistent results.
It stays out of the way, allowing the berries to dominate the aroma while adding the slightest hint of soft esters.

    Why this yeast is ideal:

    • Keeps the finish dry

    • Lets the berry aroma bloom

    • Adds subtle fermentation fruitiness that blends naturally with raspberry and blueberry

The result is a bright, drinkable wheat ale that tastes as clean as it looks vibrant.

  • Red, Wheat, and Blue is conditioned on huge amounts of fresh raspberry and blueberry purée — over 500 pounds total.

    Raspberry
Provides bright acidity, vivid berry aroma, and tart punch. Contributes to the beer’s purple hue and refreshing finish.

    Blueberry
Adds depth, darker berry sweetness, and a velvety, round fruit profile that fills out the mid-palate.

    Why This Blend Works
The raspberries bring sparkle and tang; the blueberries bring body and richness. In an unfined, unfiltered wheat ale, the fruit purée creates a lush, opaque appearance and a mouthfeel that’s soft, smooth, and packed with berry character.
