East Kent Golding (EKG) is one of the oldest and most beloved English hop varieties, known for its refined character and elegant balance. It brings soft floral notes, gentle earthiness, and a mild, sweet spice that perfectly complements roast-forward beers.
Why it works in a porter:
EKG adds just enough bitterness to balance the malt richness, while its subtle herbal-floral qualities blend seamlessly with chocolate and roasted grain. Its restrained character ensures the blueberries remain vibrant without competing with hop aroma. -
Munich adds a deep, malty backbone with notes of bread crust, toasted grain, and warm sweetness. Essential for roundness and depth in a porter.
Carafa Special I
A smooth, dehusked roasted malt that contributes dark chocolate, mild roast, and deep color without harsh bitterness. Perfect for building a silky, roast-forward base.Cara 45 (Crystal 45)
Provides medium caramel sweetness, light toffee, and subtle burnt sugar notes. Bridges the gap between roasty malts and blueberry sweetness.White Wheat
Boosts head retention and yields a fuller, smoother mouthfeel. Helps the blueberry purée integrate into the body of the beer.CaraAmber
Adds a warm, toasted caramel nuance with hints of biscuit and light toffee. Enhances sweetness and rounds out the malt profile.Carafa Special II
A darker roasted malt than Carafa I, bringing rich cocoa, deeper roast, and dark chocolate intensity — again without harsh astringency. Amplifies color and adds complexity to the finish. Why this malt bill shines in a blueberry porter:
Together, these malts create a layered, chocolate-forward, toasty foundation that balances the fruit. The dehusked Carafa malts keep the roast flavor smooth and approachable, while the caramel malts add sweetness that harmonizes with the blueberry tartness. The result is a porter that’s decadent, balanced, and richly flavorful. -
A neutral American ale yeast is essential for letting both the roast complexity and blueberry character shine.
What it brings:
Clean, crisp fermentation
Mild esters that support fruit aroma
Smooth, medium-dry finish
Balanced expression of malt and fruit
This yeast ensures the porter's richness stays in check while allowing the blueberry character to integrate naturally rather than dominate.

Blitzen’s is conditioned on an impressive amount of blueberry purée, infusing the beer with bright, natural berry flavor.
Blueberry contributes:
Juicy, tart sweetness that lightens the roast
Vibrant berry aroma layered atop cocoa and coffee
Deep, ruby-purple undertones within the dark body
A refreshing counterpoint to the beer’s richness
Why blueberries work beautifully in a porter:
The chocolatey, roasty character of the malt pairs exceptionally well with blueberry’s tart-sweet profile — similar to pairing dark chocolate with berry compote. The fruit brightens the entire flavor arc while still letting the beer feel like a classic winter porter.
