In the Kitchen with Brewhouse Craft Beer: Apricot Wheat Ale Pancakes

We live in a city that’s a focal point of craft beer in Minnesota. In fact, Fitger’s Brewhouse kickstarted the state’s craft beer culture nearly 25 years ago. Our tradition has been innovation.

We’d like to share with you a recipe that brings a bit of the Brewhouse essence right to your breakfast or brunch table–Amazingly flavorful pancakes made with one of our original and most popular staples: Fitger’s Brewhouse Apricot Wheat Ale! Enjoy.

Ingredients:

1 cup all-purpose flour
1/3 cup brown sugar
1 tsp cinnamon
1 tsp baking powder
1 egg
1 additional egg yolk
2 tbsp canola oil
1/2 tsp vanilla
1 cup Fitger’s Brewhouse Apricot Wheat Ale

Method:

Combine flour, brown sugar, cinnamon, and baking powder in a mixing bowl.

In a smaller bowl, mix egg, additional egg yolk, canola oil, and vanilla. 

Make a well in the dry ingredients and add the egg mixture and cup of Apricot Wheat Ale to the center. Whisk to combine.

Heat skillet or griddle to a medium-low heat and brush with butter or spray with cooking spray. Pour 1/4 – 1/2 cup of mixture on the griddle to cook. This is a dense mix, so it is best flipped right when bubbles begin to appear on the top or the sides begin to look dry.

Yields about 6-7 pancakes.
