We created this beer to be a mildly sour version of our very popular Cherry Batch. This beer is not nearly as sour as our Framboise or Duluth Sour. Those beers both undergo a longer fermentation process (2 plus years) and contain the bacteria Pediococcus, which produces more acidity over time than Lactobacillus. We produced Wild Cherry Sour in about 6 months. The flavors of the cherries meld well with the sourness in this beer. Enjoy!
