This beer is the result of our first all Brettanomyces fermentation at The Brewhouse. Brettanomyces is an entirely different species of yeast from standard brewing yeast (Saccharomyces). It can exhibit a wide variety of flavors including tropical fruit, earthiness, spiciness and funkiness. Brett Starfire has a pronounced tropical fruit aroma and flavor and it finishes with a bit of earthiness and funk. It is being poured on our “wild” beer line, but it doesn’t express any sourness or acidity. It is very interesting to taste it side by side with regular Starfire and observe the differences. It has a higher alcohol content than Starfire because Brettanomyces will feed on many sugars that Saccharomyces cannot. We aged this beer for 11 months before bringing it to you on tap. Enjoy!
